When creating this dish, the Dusty Miller has truly taken advantage of its brilliant location and has used the best that Cheshire has to offer, by fusing rustic local ingredients together to create a colourful and tasty meal. The popular traditional country pub and restaurant is set in the rural village of Wrenbury, providing a relaxed and friendly atmosphere. And as a restaurant that prides itself on the quality of food and drink which it produces, it is no surprise that this dish is such a firm favourite.

This recipe serves 4, and because it's quick and easy to make (15 minutes preparation times and 30 minutes cooking time) it's the perfect meal for feeding the family or entertaining friends this March!

Baked naturally smoked haddock, with a Appleby's Cheshire cheese rarebit, spring onion salad and fried Cheshire new potatoes.

INGREDIENTS
4 naturally smoked haddock fillets, skinned and pin boned
225g grated Cheshire cheese
2 tbsp milk
1 crushed garlic glove
1 tbsp plain flour
1 tbsp fine white breadcrumbs
1 tbsp English mustard powder
1 beaten egg
Shake of Worcestershire sauce
Pinch of paprika
Dressed mixed leaves (try honey and mustard dressing)
Sliced spring onions
Cooked and sliced Cheshire new potatoes

METHOD
1. Melt the cheese and milk together with the garlic and paprika until smooth.
2. Add in the flour, breadcrumbs and mustard powder. Cook for a few minutes until the mixture comes away from the pan. 3. Let it cool slightly, then add the beaten egg - the mixture should resemble modeling clay.
4. Press the rarebit onto the top of the haddock fillets.
5. Place on a baking tray in a hot oven (200C) for 10-15 minutes, until the fish is cooked at the rarebit starts to toast.
6. While the fish is cooking, shallow fry the slices potatoes in hot oil and season.
7. Arrange the haddock on the dressed leaves, spinach and chopped spring onions and serve with the friend new potatoes.
