The latest recipes from some of the top chefs in the North West and North Wales.
This brilliant casserole makes the most of the delicious sausages made at Home Farm in Wales by Alison and Dave Everett. The couple moved from Liverpool to Overton-on-Dee and, starting off with six chickens and a couple of pigs, they now have a rare breed pedigree pig herd that consists of over 60 free range animals, including Gloucestershire Old Spot, Oxford Sandy and Black, Middle Whites and Saddle Backs. They produce 14 varieties of sausage, including Shropshire blue cheese and leek, apple and cider and a juicy ploughmans sausage that combines Cheddar cheese, beer and pickle - all lovingly hand made on site.
Home Farm's products are available from the farm itself (open most days, but it's worth ringing beforehand) or at Garden Village Farmers' Market, Wrexham (the first Saturday of each month) - and you can now also buy their products online!
INGREDIENTS
6 Home Farm pork sausages, cut into 3cm pieces
5 rashers of Home Farm smoked back bacon, cut into 1cm pieces
200g shallots, sliced
3 cloves of garlic, crushed
200g leeks, cut into 1cm pieces
200g carrots, cut into 1cm pieces
1 bay leaf
1 small bunch of sage, finely chopped
420ml chicken stock (boiling)
330ml bottle or dry cider
5ml olive oil
1tbsp plain flour
Salt and pepper
METHOD
1. Heat the olive oil over a medium heat in a large pan. Add the sausages and bacon and fry until golden brown.
2. Add the shallots, leeks, carrots, bay leaf and garlic, and continue to fry until the vegetables are slightly browned.
3. Add the flour and stir, then pour in the cider and reduce by half.
4. Add the chicken stock and simmer for 20 min, until reduced to the desired consistency.
5. Add the sage and check the seasoning.
6. Serve with creamy mashed potato
